Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/4 cup brown sugar
  • 1 teaspoon garlic, minced
  • 1 tablespoon dry mustard
  • 1/2 cup cider vinegar
  • 4 cups pineapple juice
  • 1 (16 ounce) jar pineapple fruit preserves

Directions

Step 1

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.

Step 2

Add chopped onion and red bell pepper to the skillet. Sauté until they start to brown and become tender.

Step 3

Stir in brown sugar, minced garlic, dry mustard, and cider vinegar. Cook for about one minute until the mixture becomes bubbly.

Step 4

Add 4 cups of pineapple juice to the skillet and stir well. Allow the mixture to simmer for a few minutes until it thickens slightly.

Step 5

Remove the marinade from heat and let it cool. 

Step 6

Place your choice of meat in a large resealable plastic bag or a shallow dish.

Step 7

 Pour the cooled marinade over the meat, ensuring it's fully coated.Seal the bag or cover the dish and refrigerate for at least overnight, or up to 24 hours. 

Step 8

 Preheat your barbecue grill to medium-high heat. Remove the meat from the marinade and grill until cooked to your desired doneness, basting frequently with the marinade during cooking.

Step 9

  • Near the end of the cooking process, spread the pineapple fruit preserves on top of the meat and allow them to brown slightly. Remove the meat from the grill and let it rest for a few minutes before serving.
